Sometimes when we’re all enjoying a leisurely weekend morning, I whip these up for no good reason at all. It sure does get everyone’s day off to a great start! I’ve been making these rainbow waffles for years, and they come out perfect every time! It’s time that you guys give them a try! It’s totally up to you on what colors you want for your waffles and if you want to go bold or pastel. I was in the mood for a soft rainbow that morning, so I used just a bit of food coloring of blue, purple, yellow and pink to get the pastel effect. Separate the batter into four small bowls (one bowl for each different colored waffle). Add 2-3 drops of different colored food coloring into each bowl. Stir each bowl with a clean spoon, separately, getting the color mixed in completely with the waffle batter. Use more drops if you want the color to be more dramatic and vibrant. Warm up your waffle iron. Once heated, add about 3/4 cup of batter to the iron and cook each waffle for 4-5 minutes. Continue until all batter is gone. Top your waffles with plenty of maple syrup and berries, then serve and enjoy. I love how light and fluffy these waffles get! And surprisingly there’s not even any eggs in the recipe?! If you’re planning to keep your waffles in the refrigerator, once completely cooled, you can store them in an airtight container until you’re ready to reheat them. To store your waffles in the freezer, after they are completely cooled, wrap them individually in plastic wrap, then place all the wrapped waffles in a gallon size freezer bag.
