Don’t you agree that grandma has the most wonderful recipes? They never fail and this Lazy Daisy Oatmeal Cake recipe is no exception. It’s one of my favorites and one of those desserts that’s been passed down from generation to generation. Have you ever tried a Lazy Daisy Oatmeal Cake? Funny name, but a MUST try cake recipe!

Not only is this oatmeal cake beyond delicious, it’s also super easy. You probably have everything needed to make it, in your pantry right now!

Ingredients Needed for this Recipe

Old fashioned rolled oats (please make sure they’re rolled oats – not quick oats)

Boiling water Butter Eggs Vanilla Flour Baking soda Cinnamon and nutmeg Milk Walnuts or pecans

How to Make Oatmeal Cake

First you’ll add boiling water to the old fashioned oats and let them soak in a bowl, covered with a towel for about 20 minutes.

Meanwhile in a separate mixing bowl (or the bowl of an electric stand mixer) beat the butter and sugar until fluffy.

Add in the eggs and vanilla and continue mixing. Add in the soaked rolled oats and continue mixing.

In another bowl, mix together flour, baking soda, cinnamon and nutmeg.

Add flour mixture into oats mixture and stir until all ingredients are combined. Spray an 8×8” baking pan with nonstick spray and then lightly flour. NOTE: We are going to add our pan under the broiler on low for a couple minutes at the end.  Make sure you are using a pan that is broiler safe.  Pyrex glass is generally not broil safe, unless it’s a specialized variety. Pour mixture into the pan. The mixture is going to be very wet – don’t panic, it’s supposed to be. Bake at 350ºF for 55 minutes.

After removing the cake from the oven, allow it to cool for 10 minutes.  While the cake is in the oven, stir together the topping mixture in a mixing bowl. Once the cake is set and has cooled for 10 minutes, use a spatula to spread the topping mixture over the top.

Put cake back into the oven and broil on LOW for 2-4 minutes. Once the topping starts to bubble, remove from oven. You want the topping to be slightly browned. Watch it carefully, you don’t want it to burn. 

Allow the cake to cool before cutting it into pieces and serving. Cake can be enjoyed warm or cold.

Variations to this Recipe

If you aren’t a fan of coconut, simply leave it out. If you don’t like nuts or have a nut allergy, they can be omitted too. Try adding raisins or chocolate chips to the cake, if you really want to change things up. If you don’t have nutmeg on-hand, feel free to leave it out.

 

What Makes This Oatmeal Cake Recipe So Delicious

The addition of oatmeal to a cake may sound strange, but it makes this cake incredibly moist and gives it the perfect texture.  The topping, which is a mix of walnuts, coconut, brown sugar, vanilla, butter and milk, is absolutely wonderful! When you add the topping and then broil the cake for a couple of minutes, the topping melts and gets bubbly and is SO divine.
