Homemade Breakfast Sausage Recipe
If you’ve never made breakfast sausage from scratch, you need to try it. You’ll be surprised by how easy they are to make, not to mention how much more delicious they are than those store bought sausages. Serve with scrambled eggs or hard boiled eggs and hash browns for a delicious breakfast! Homemade breakfast sausage is ready in less than 30 minutes and uses ground meat and simple spices. Once you make them in your kitchen, you’ll never buy them in the grocery store again! These breakfast sausages are savory with a touch of sweetness, and they’re not spicy at all which means the entire family can enjoy them together. We love them next to our scrambled eggs and on egg and cheese sandwiches!
How to Make Breakfast Sausage More Healthy
Most commercial sausages are only made with ground pork (or worse, questionable ingredients!), but we’re going to make this more healthy by mixing ground pork along with ground turkey. The ratio will be 1:1, 1 pound ground pork and 1 pound ground turkey.
How to Make Breakfast Sausage from Scratch
In a small bowl mix together sage, Italian spices, salt, pepper, garlic powder, brown sugar and ground cloves.
Tip: Want your sausages to be a little spicy? Add 1/8 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like it.
In a large bowl add ground pork, ground turkey and add in spices.
Mix everything together either with a spoon or your hands. I know it’s messy but I highly suggest you use your hands to mix this, it’s easier and you’re going to combine those spices better.
Now here’s how to roll out the sausage without making a big mess!
Place a large piece of parchment or wax paper down on the table. Place sausage mixture on top.
Place an equal sized piece of parchment (or wax) paper down on top. Use a rolling pin and roll out the sausage until it’s 1/2 inch thick.
Time to make sausage patty shapes! There’s 2 tools you probably have in your kitchen that will make good shapes.
Use a biscuit cutter, or a circular cookie cutter.
Or use the top of a wide mouth mason jar.
You should end up with anywhere between 15-20 sausage patties. I ended up with 18.
Spray a large frying pan with nonstick spray and heat over medium high heat. Brown sausages on both sides, about 5 minutes a piece, so 10 minutes total.
I usually have to make 2 batches due to my frying pan size. Make sure to spray your pan again with nonstick spray if you’re doing another batch.
Now enjoy them next to scrambled eggs….
Or enjoy them on a toasted egg and cheese breakfast sandwich! We love them this way, including breakfast for dinner!
How to Make Breakfast Sausage in Oven
Bake at 400 degrees on a baking sheet that’s been sprayed with nonstick spray or foil. Cook for 10 minutes, flip and then cook for an additional 10 minutes, watching them to make sure they don’t burn. If you want those nice browned marks on top place them under the broiler for a minute or two.
How to Freeze Sausage Patties
If you have leftovers, or want to make a double batch you can easily freeze sausage patties. Place them in freezer bags, seal bag and freeze. When ready to eat, pop in the microwave until fully heated.
