You guys. This pie is incredible. The pie crust! The sugary fruit filling! Everything tastes so good! I might have eaten half of this pie in a day because I couldn’t stay away from it. It’s that good. Even though this recipe is “gluten free”, I’m going to be honest and say you won’t be able to tell. I admit that many times you can tell when a recipe is gluten free, but not this one. Because it’s so good, it’s going to satisfy everyone in your family and friends, even if they don’t follow a gluten free diet. (By the way, want another amazing sweet gluten free recipe? Make my Pistachio Cookies!). This delicious pie is filled with a sugary spice apple plum mixture. Honeycrisp apples are my favorite for this pie but you can use any that you have on hand. You’ll need to peel and thinly slice the apples, either by hand or you can cheat by using your food processor. Also remove the pits from the plums and chop them up.
The pie crust is incredibly easy to make and tastes great! Because this entire recipe is gluten free, the base of the pie crust is pecans, brown sugar and gluten free flour. I want to tell you that this is my favorite gluten free pie crust recipe because the crust holds up so well when baked. You’ll see in below pictures how beautiful the pie looks even when cut up in slices! Spread your pie dough into a 9 inch pie pan and spread it around forming the crust. Chill the pie crust in the freezer, for at least 30 minutes so it sets nicely. Alternatively you could freeze this up to a week if you want to plan ahead of time, perfect for the stressful holiday season. After you take the pie crust out of the freezer, add your fruit filling to it. Bake the pie for 60 minutes or until the middle is bubbling and the pie crust is a golden brown. Then allow it to cool for a little bit before serving. I like to sprinkle powdered sugar on top to make it look more festive but that’s completely up to you!
