I love Christmas morning. As a kid, my parents had a rule that I had to stay upstairs until they went downstairs first and put on the tree lights. When Santa came on Christmas Eve, he would decorate our tree, so the first time I would see it all lit up and decorated was on Christmas morning. It was always beautiful!

Christmas Morning Breakfast

Now we decorate our tree weeks in advance, but Christmas morning is still so special. Why? Because it’s one of the most delicious breakfast meals of the year! There’s always bacon sizzling, bread toasting, scrambled eggs and a big plate of gingerbread pancakes. These gingerbread pancakes are so festive and fun because we add some red food dye to them, to make them a little more “Christmasy”. This is totally optional, but kids love them this way! The pancakes are fluffy, and taste (and smell) just like you’re eating soft gingerbread cookies! The entire family will love them (trust me!).

These Christmas pancakes include simple ingredients that you likely already have in your pantry from all the baking you’ve been doing this season. This recipe makes enough to feed a small family or you can double the batch and have enough for a larger family. Here’s what you need:

How To Make Gingerbread Batter

Start by whisking together flour, baking powder, baking soda, salt, ginger, cinnamon and brown sugar in a large mixing bowl.  Make a well in the middle and add egg, vanilla and water. Continue to whisk everything so all ingredients are combined. Next, add some fun color to these pancakes (optional, but recommended!)! Add a couple drops of red food coloring to give the batter a rich red coloring. Feel free to have fun here and get your kids involved. Maybe you want to do half red pancakes, half green pancakes instead? Go for it!
Spray a griddle or pan with nonstick spray. Drop 1/3 cup of batter for each pancake. Wait until pancakes are cooked on one side, then flip to the other side and repeat. Continue this method until all of the batter is gone. Serve and enjoy!

What to top the pancakes with?

My favorite pancake topping is maple syrup but here are a couple other festive ideas for your Christmas pancakes if you want to make them really special. Powdered sugar – I love how this looks on the pancakes! The sugar looks just like a dusting of snow! Frosting – This makes these pancakes a centerpiece on the breakfast table! Grab an ice cream cone, and place it upside down on top of a stack of pancakes. Use white frosting to frost the entire ice cream cone, making it look just like a snowy white tree. These fluffy gingerbread pancakes have the classic gingerbread flavor that you know and love! Enjoy and have a delicious holiday breakfast!
