Do you know what I love? Ravioli! Do you know what I really love? Homemade ravioli!  Do you know what I really really love? Crispy Baked Ravioli that is easy to make and filled with three types of cheese!   Right now I don’t have the time to make homemade ravioli dough so I came up with a simple solution.  Instead of spending hours making dough from scratch, use wonton wrappers!  By using the wonton wrappers you’re going to get crisp ravioli once baked in the oven.   You’re also going to save yourself a lot of time instead of having to knead and let dough rise.    To save even more time, you can freeze these for quick weeknight meals. At the bottom of this post I’m including full instructions on how to freeze this Easy Baked Three Cheese Ravioli!

Let’s make baked ravioli!

You can find wonton wrappers in the store in the frozen food aisle.  I ordered mine from Peapod which I’ve talked about how much I love in the past!  With a click of a button I get all my ravioli ingredients delivered straight to my door – don’t you love technology?  Not only do these ravioli have 3 types of cheese in them but they also have fresh spinach to get your vegetable servings in!  I can promise you that spinach lovers and haters will all love this ravioli.  It’s such a sneaky way to add vegetables into dinner too!    The most time consuming part of this recipe is filling the wonton wrappers with the cheese mixture.  Usually this takes me about 15 minutes to do, but grab your partner or kids and you can speed up the process. If you want to serve these immediately then bake for 15-16 minutes or until edges are brown and crisp. Make sure to serve with your favorite pasta sauce and garnish with fresh basil on top. I also love to make these to freeze for quick weeknight meals.    To do this place wontons on parchment lined cookie sheet. Continue to do this until cookie sheet is filled. Sprinkle ravioli with a little bit of flour (this prevents them from sticking together), add a new piece of parchment paper on top and continue filling up the next layer. Put in freezer for 1 hour. Remove ravioli from freezer and place in freezer bags, put back in freezer until ready to eat.     When ready to serve remove frozen ravioli from freezer and bake as usual.
